Veggie Tots & Cauli Bites


What do I enjoy less than trying to follow an extremely long, complicated sports game? Trying to follow an extremely long, complicated recipe. Thanks to these veggie tots & cauli bites, I only had to do one of the above on Sunday. I was determined to be somewhat healthy for this Superbowl, but at the same time actually enjoy what I was eating. This along with my laziness when it comes to baking meant that whatever I was going to whip up would have to be quick, easy, and delicious.


Cauli Bites



Not to toot my own horn, but I was absolutely delighted with how these turned out. I had the whole plate cleaned in minutes. They took about 15 minutes to make in total and minimal ingredients.

What to do

Pre-heat oven to 200 degrees C. Chop the cauliflower head into little pieces. Whisk the eggs in a bowl. Dip each cauliflower piece into the egg mixture, then roll into the breadcrumbs. Place on tray lined with olive oil. Top with seasonings. It really is that simple. Put it in the oven for 15 minutes.


The whole thing takes about 20 minutes, and they come out so divine. We topped them off with a little sriracha hot sauce but you could also use a sprinkle of cheese or salsa!


Veggie Tots



These make for the perfect healthier treat/snack and I will definitely be making them more frequently as a side dish. Like the cauli bites, they have minimal ingredients, most of which you will probably have in the cupboards already!


What you need

  • Broccoli Head

  • 1 cup of Breadcrumbs (gluten free)

  • 1 cup of cheese (low-fat if you wish)

  • 2 eggs

  • 1/2 onion

  • Olive oil for baking

  • Seasoning (salt, paprika)

What to do

Preheat oven to 200 degrees C. Boil the broccoli for two minutes. Chop it up into little pieces. Chop up the 1/2 onion. Mix all of the ingredients into a bowl. Roll it into balls with your hands and place it on the tray lined with oil. Place in the oven for 15 mins.


I was going to make a video tutorial of how to make both of these low-carb, healthy snacks. However, it's actually so simple that a video explanation would almost be insulting.
