I'm Josie, a 22 year old girl from Ireland.
Since I was born I have always been the one with all the allergies- nuts, seeds, feathers and my dog to mention a few. When I was eleven years old I was diagnosed with Type 1 Diabetes and one year later I was told I could no longer eat gluten.
The thought of having to cut out pizza, pasta and bread from my every-day life was more upsetting to me than the prospect of having to inject myself multiple times daily. However, I soon realised that Type 1 Diabetes is slightly more complicated than a couple of injections, and that there's a gluten-free alternative to almost everything.
Although gluten-free foods have become more widely available today, they often contain ingredients which don't suit Type 1 Diabetes. So, I built this website with other Type 1 Diabetics, Coeliacs, or anyone looking to adapt to a naturally gluten-free diet in mind. On this website there are healthy recipes, gluten-free meal ideas, gluten-free recommendations abroad and diabetes tips and advice that I've learned along the way.
